Foodie Friday: Cowboy Up Taco Soup and Cornbread!

My mom’s cornbread with taco soup is one of my favorite dinners.  I love how this recipe takes the old "traditional" one and gives it some personality. Looks really easy to cook too!It’s satisfying, makes great leftovers, and perfect for feeding a crowd.  This cornbread recipe is so good it’s like eating cake with your dinner!  You can get my mom’s cornbread recipe using the Baking Outside the Box system here.

Cowboy Up Taco Soup

Prep Time30 minutes
Cook Time15 minutes

Ingredients

  • 1 lb ground beef
  • 1 onion
  • 2 packets taco seasoning
  • 1 can black beans
  • 1 can chili beans
  • 1 can corn
  • 1 can diced tomatoes
  • 1 1/2 cups salsa
  • 1/4 cup chopped fresh cilantro

Instructions

  • Brown onion and ground beef together, drain beef.
  • In a crock pot or large pot add remaining ingredients (pour in entire cans , including liquid) bring to a boil, allow to cool slightly and serve.

Notes

Great for freezing for later - just leave out the cilantro. When you thaw and reheat it add fresh cilantro for a fresh taste.
We like to serve with tortilla chips, sour cream, and salsa for toppings.
