I am a big fan of cinnamon. The aroma and taste are one of my favorites. I love cinnamon rolls and sugar cookies, but don’t have the patience to make either. Traditional cinnamon rolls are very time intensive from letting them rise to frosting them one by one, etc. Traditional sugar cookies require refrigeration and then there is all the rolling out and cutting of shapes. While it can be fun, there goes your day. I wanted something quick and fast that combined these two favorites of mine. I am happy to report that I succeeded. I took this 9X13 pan to a family gathering last week and I was the last to arrive almost an hour past the starting point. The table was full of cookies and brownies and slush desserts. However, an hour later only one row remained in the pan while most of the other desserts lay untouched. I declare that a winning recipe to show up last and get eaten. You will love the soft, buttery, cinnamon sugary goodness this recipes delivers.
Cinnamon Roll Sugar Cookies
Ingredients
- Sugar Cookie Base:
- 4 C . Perfect Sugar Cookie Mix (get that recipe here)
- 1 egg
- 1/2 C . sour cream
- 1/2 C . softened butter
- 2 tsp . vanilla extract
- Cinnamon Roll Crumble:
- 1 1/2 C . Blondie Mix (get that recipe here)
- 3/4 C . softened butter
- 3/4 tsp . cinnamon
- 1/4 tsp . nutmeg
- Brown Sugar Cinnamon Buttercream Frosting:
- 1/2 C . softened butter
- 1 tsp . vanilla extract
- 3 C . powdered sugar
- Pinch of salt
- 1/4 C . packed brown sugar
- 1/2 tsp . cinnamon
Instructions
- Mash together cinnamon Roll Crumble until crumbly. I like to use a slotted serving spoon since I don't have a pastry cutter. Refrigerate after preparing.
- In a separate bowl - Mix cookie base until smooth and creamy. Add milk until desired spreading consistency.
- In a greased 9X13 pan press 1/3 of the sugar cookie dough into the bottom. Spread Cinnamon Roll Crumble onto that layer. Then carefully press the remaining 2/3 of the sugar cookie dough on top of the Cinnamon Roll Crumble layer. Bake at 350 degrees for 30 minutes. The edges will be golden and the top will mostly be blonde. Cool completely.
- Frosting:Mix until uniform and spread on Cinnamon Roll Sugar Cookie.
