I am purposefully calling this recipe “Cookie Butter Blondies” with the finer points in brackets because I know there may be many variations of the new cookie butter obsession. Yes, this is already to obsession. I had avoided Cookie Butter ever since I started shopping at Trader Joes almost 3 years ago. I knew it would be bad news. I remember eating the Biscoff cookies on Delta flights over a decade ago and being intrigued how I liked a crispy cookie that had a very faint cinnamon taste. Usually I prefer soft and chewy cookies that have a fist full of cinnamon. I started coming across Cookie Butter or Biscoff Cookie recipes online. I found a 2014 posting that had 30 recipes using this dangerously addictive ingredient and knew I had found a new thing to incorporate into my baking past time. I had a hard to wanting to put the cookie dough into the pan since it was beyond amazing. However, baked it is just as good and it is a mysteriously addictive taste in the bar since it is subtle enough that it makes you want to keep eating. So be warned baking lovers, this stuff is good, almost too good!
Cookie Butter Blondies with Oatmeal & White Chips
Ingredients
- 4 C . Oatie Mix (you can get that recipe here)
- 1/2 C . softened butter
- 1 tsp . vanilla
- 1/2 C . Cookie Butter (I used Trade Joes)
- 2 eggs
Instructions
- Mix until dough is uniform. Spread and press into greased 9X13 pan. Bake at 325 for 30 minutes or until the middle looks mostly done (puffy but not browned). Don't over bake, since these are bars they will cook longer than cookies!
