easy pumpkin muffinsI have yet another pumpkin recipe for you….The other day I pointed out to my Darling Husband that this was the third pumpkin recipe I was posting in a month and that we might want to get away from the pumpkin for a while.  He looked mortally offended that should suggest such a thing and then said “but it’s pumpkin season”. You can see how his obsession even takes over his grocery shopping here.  It’s a good thing that I like pumpkin.
He is determined to make the ultimate Pumpkin cheesecake this year so you might see yet another pumpkin post. We do eat other foods, I promise.
I do take partial blame for the muffins as I was wanting some pumpkin chocolate chip muffins and my hubby and sweet enough to oblige me. Nothing beats warm muffins on a cold Sunday Morning!

Easy Pumpkin Chocolate Chip Muffins

Ingredients

  • 2 1/2 cups muffin mix (recipe on Baking Outside The Box )
  • 2 eggs
  • 1 cup canned pumpkin
  • 1 cup chocolate chips
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • Dash of clove

Instructions

  • Mix dry ingredients together
  • Add pumpkin and eggs
  • Put in greased muffin tin and bake at 350 degrees for 10 to 15 minutes
