It’s that time of year that my husband lovingly refers to as “pumpkin season”. It’s that special time of year where he can great all manner of pumpkin goodness. This is his latest creation. Based on my mother’s “Raspberry Blitz Bars”, these bars are crumbly, spicy, buttery, goodness. The cookie bar base with the pumpkin butter center, topped with crumble pecans and white chocolate chips makes for a wonderful combination. The recipe is for the pumpkin butter – then jsut follow the recipe found on BOTB replacing the jam with the pumpkin butter and the walnuts with pecans! Enjoy!
Pumpkin Pecan Crumble Bars Recipe
Ingredients
- For Pumpkin butter:
- 15 oz Can of pumpkin
- 2/3 C brown sugar
- 1/4 C honey
- 1 T Lemon Juice
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/2 tsp cloves
Instructions
- combine ingredients and bring to a boil over medium high heat. Continue to cook on low heat for 20 to 25 minutes.
