You can switch out the lime juice to Lemon if that what you have available – just be aware that it will change the taste slightly.
Easy Watermelon Popsicles Recipe
Step 1 – Begin to combine ingredients
Take the watermelon cubes. If working with little ones let them smash them in the a bowl with a fork or with clean hands (it’s messy but fun!). Make sure there are no seeds in the mix. If there are pick them out. Then transfer the mashed watermelon to a blender along with the sugar and lime juice.
Step 2 – Blend the watermelon popsicle mixture smooth
Pulse the blender a few times before moving to a full blend. Continue to blend until the mixture is smooth and the sugar is dissolved in the mix.
Step 3 – Prep for Freezing
Pour the smoothly blended watermelon popsicle mixture in the molds.
Keep in mind that each mold will need some space at the top for expanding while freezing and for the popsicle stick.
Step 4 – Properly Freeze
Freeze for at least 5 hours or overnight before removing from molds. (Honestly Overnight is best).
Tip: If you have trouble getting the watermelon popsicles to release form their molds run some hot water on the outside of the mold case to get them to release.
