Garlic and Mushroom Green Beans Recipe

Hi all!  It’s Laura from Creating and Baking Outside the Box and it is a pleasure to again be a guest at Fleecefun.    It’s a busy time of year and sometimes it’s hard to get into the kitchen when one needs to the most.  That’s why this week I am sharing my Garlic and Mushroom Green Beans recipe a very simple yet elegant side dish that I use for both company and informal occasions.

It’s easy to get fresh green beans this time of year and I love this dish because it’s very flexible.  It’s as easy to make for 1 as it is for 6.  Because it uses fresh ingredients the beans don’t have that dead-in-the-can-look.  Instead they go bright green after a few minutes of sauteing and you only cook them until they hot and tender crisp.

This is a side dish you could serve on a Wednesday spaghetti night or with Christmas dinner.  Enjoy!  — Laura

Garlic and Mushroom Green Beans Recipe

Garlic and Mushroom Green Beans are simple enough for a week night speghetti dinner or classy enough for the holiday table.
Course: Side Dish
Cuisine: American
Servings: 4 -6 servings

Ingredients

  • 2-3 cups fresh green beans , washed with ends trimmed
  • 3/4 cups sliced mushrooms
  • 2-4 tsps . olive oil
  • 2 cloves chopped garlic
  • pinch coarse sea salt (opt)

Instructions

  • Warm 2 tsps olive oil in a medium saute pan. Saute mushrooms till just turning golden. Remove from pan and set aside. Add 2 tsps. olive oil to pan and garlic. allow garlic to warm up in oil but not brown. Add green beans and saute about 5-7 mins over medium heat until green beans become tender crisp. Toss mushrooms back into pan just long enough to rewarm. Sprinkle with coarse sea salt if desired and serve while hot.
