BROCCOLI CHICKEN CASSEROLE

It’s Lindsay with Frenchie back today for Foodie Friday making a family favorite of ours. This recipe starts out healthy then takes a bit of a turn towards the end but can definitely have some healthy substitutions made. This recipe is really easy and I end up making two at a time and put one in the freezer for later.

You’ll want to first preheat your oven at 375 degrees then how I start is with just some frozen broccoli and place it in a 10X7″ casserole pan. I then get myself a roasted chicken from the grocery store and chop it up, layer that over the broccoli. Cook up some minute rice, about two cups, and layer that over the chicken. Next you’ll take a 10oz. can of Cream of Chicken soup and mix it with the same amount of mayonnaise. This is where you can substitute for yogurt. I’ve never tried it, but I’m sure you’ll cut down on calories for sure. You’ll place that mixture on top of the rice and then top with cheese. Use as little or as much as you’d like. Grab some foil and spray with some non-stick cooking spray and cover. Cook for 40 minutes then uncover and continue cooking for an additional 20 minutes. Delish! I love to serve this with some green salad and for hour d’evours we always serve veggies and our famous Veggie Dip and for dessert try my Grandma’s best Chocolate Chip Cookies.

 

 

Yummy Cheesy Broccoli Chicken Casserole

Ingredients

  • Frozen Broccoli
  • Roasted Chicken
  • 2 cups Rice
  • 10 oz . can Cream of Chicken
  • 10 oz . Mayonnaise
  • 2 cups Cheddar Cheese

Instructions

  • Lay Frozen Broccoli in a casserole dish, chop chicken and add on top of broccoli. Cook rice according to package directions and add to the casserole pan. Mix together the Cream of Chicken soup and Mayonnaise or substitute yogurt if you wish. Add to the pan and add cheese. Spray the foil with non stick spray and cover, bake at 375 degrees for 40 minutes, uncover and continue baking for an additional 20 minutes. Allow to cook for 5 minutes before serving. Serve with a green salad and some rolls.
