How to make Mini Quiche!

But the hit of the brunch was the Mini quiche!  I had several people ask me for the recipe for these yummy tiny treats.  So I’m going to share how to make these with you! Now you can impress your guests at your next brunch.  These are great for breakfast, but my husband and I will eat this wit a salad for a light dinner.

 

 

 

 

 

 

 

 

 

 

 

 

 

How to make Mini Quiche!

Ingredients

  • 6 eggs
  • 1/2 cup Bisquick
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup cubed (small) ham
  • 2 cups shredded cheese
  • Pam
  • Optional: Minced tomatoes , kale, spinach,

Instructions

  • Preheat oven to 350 degrees
  • In a blender mix until frothy:
  • 6 eggs
  • 1/2 cup Bisquick
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Grease a mini muffin tray and fill cup 2/3 full of egg mixture
  • add a few cubes of ham ( add few tomatoes, spinach and kale if desired)
  • top with shredded cheese (approx 1 1/2 tsp.)
  • Bake in oven for 12 - 14 minutes quiche should be a nice golden color
  • Serve immediately and impress your friends!



This being our first “annual” brunch we learned a few things.  Like if you have too many griddles on our outside plug it will trip the circuit.  We need a lot more shade in out back yard.  We also need more hands helping out.  My amazing Mother in law came to the rescue and helped out a ton!

We transformed out backyard.  We set up tables and used my 1776 collection for centerpieces.  I also added mason jars with a balloon weight in it and gumballs to add balloons to the tables. We served fresh fruit. Hot off the griddle pancakes with fresh blueberries or chocolate chips mixed in. (Doesn’t my husband look good in his 1776 apron?!)
