YOU WILL NEED:

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup packed brown sugar (light or dark)
  • 1/2 cup butter (1 stick)
  • 1 large egg, at room temperature
  • 1/3 cup mini chocolate chips
  • 2 tsp vanilla extract
  • 1/8 tsp peppermint extract (optional)
  • 1/4 tsp salt

    For the Peppermint Chocolate Layer:
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup assorted peppermint candies (candy canes, peppermint M&Ms, or peppermint baking pieces)

Peppermint Blondies Recipe Tutorial

Step 1 – Preheat the Oven and Prepare the Baking Pan

Heat oven to 350 F to start baking your Peppermint Blondies. Grease and line a 8 inch or 9 inch baking pan with parchment paper.

Step 2 – Mix the Cookie Bar Batter

Melt butter in a medium sized microwave safe bowl, and stir in the sugar till melted. Whisk in the egg, vanilla extract, peppermint extract and salt till smooth. Now add the flour and mix well. Fold in the chocolate chips.
