8 Minute Fresh Chicken Salad

Where I live school is year round. After a short summer break my kiddos dive right back to school. 8-minute-dinnerIts funny how after an eight week break it’s so easy to fall out of a routine. It’s hard to get reading, homework, piano and time to be a kid in before bed. And since my kids are young, my husband or I have to be near them to keep them on task. This makes it hard to cook up a healthy dinner since we have such a small amount of time.
I was really excited when I heard about Tyson® Grilled and Ready® Chicken Breast Strips that are available at Walmart. These already fully cooked chicken strips are perfect for a variety of different recipes that can be fast and easy. They are made of all white meat and are 97% fat free. IMG_3230
While I was at Walmart I grabbed a few more fresh items for the quick dinner I had in mind. I used the self-check out (love those) and headed home.IMG_3233
We recently made a pleasant discovery at my house – my kids eat salad. Not only do they eat salad, they LOVE it! We have one child that we call the “salad dressing monster” because she’s decided that salad dressing is the best.
With all my ingredients I was able to chop, wash, mix, heat and blend everything in under 8 minutes.
Resulting in this:

Pretty eh?
For the salad it’s a bag of prepared lettuce, some chopped bell peppers, tomatoes, with cilantro and lime.
The dressing is also freshly made and really easy to assemble (you literally drop all the ingredients in the blender and blend).

8 Minute Fresh Chicken Salad

Ingredients

  • Salad:
  • Bag of Lettuce
  • chopped Bell Peppers
  • Diced tomatoes
  • Tyson® Grilled and Ready® Chicken Breast Strips
  • Dressing:

c sour cream (can substitute plain Greek yogurt or light sour cream)

  • 3 Pieces of crispy bacon (optional)
  • 4 T of Shredded cheese
  • 1/2 c salsa
  • 4 T of Salsa verde ( green salsa)
  • 3 T Lime juice
  • 3 tsp Ranch powder
  • 1/2 tsp Taco seasoning
  • 1/2 C fresh cilantro

Instructions

  • Take all of dressing ingredients and drop them all into a blender, blend until smooth.
  • Heat up chicken as per directions.
  • Assemble salad and enjoy!

In the winter months I can see these strips finding their way into soups, casseroles and satays. Fully cooking the meat is really the longest part of the recipe.
