Pomegranate Poppy Seed Dressing Recipe

chicken pot pieCold weather means family gatherings, fun and comfort food. Today I sharing with you a wonderful holiday meal perfect after a long day of holiday prep.  I love the combination of savory and sweet. This family size Marie Callendar’s Chicken Pot Pie, combined with this pomegranate salad and dressing is wonderful!

callendar in storefrsh foodI grabbed the family size of the homemade tasting pie in the freezer convenience meals section at my local Walmart, plus a few of the fresh ingredients I needed for my salad.

When I got home, I put the pie in the oven and got to work on making the dressing.  I personally like to throw all the ingredients into a blender to make it fast and easy.  I love the rich flavor of the pomegranate – not to mention it’s color!  Perfect for a holiday salad.

Pomegranate Poppy Seed Dressing Recipe

Course: Salad

Ingredients

  • 1 C Olive oil
  • 1 C Pomegranate Juice
  • 3/4 C Red wine Vinegar
  • 1 1/2 tsp salt
  • 1/3 C Red Onion
  • 1 1/2 tsp Poppy Seeds
  • 3/4 tsp dry mustard
  • Salad:
  • Feta Cheese
  • Baby green lettuce
  • Pomagranate seeds
  • walnuts

Instructions

  • Put all ingredients in a blender (except poppy seeds). Blend until smooth.
  • Add poppy seeds and mix briefly
  • Refrigerate until used.
  • Add to suggested salad items or create your own!

Put the dressing in the fridge and you can prep the rest of the salad.  I like to put Pomegranate seeds, feta, red onions and walnuts with baby lettuce leaves tossed together for my salad.

saladWhen you pull the pie out the oven, be sure to give it a few minutes for all that chicken goodness to cool.

This recipe makes plenty of dressing so it’s great for large gatherings and parties!
