My cookie butter craze is has now taken me down a chocolatey path that I know Angel is very happy about. As much as she enjoys pumpkin, she has a chocolate heart, or just an intense love of chocolate. I wanted to not only do the cookie butter frosting, but have some of that delicious flavor in the brownie itself. Upon tasting my concoction, I realized it was a very good decision! I thought the cupcake pan would be a fun way to deliver a brownie since mostly they’re always in a 8X8 or 9X13 pan. The trouble was I must have a cheap pan because even though I greased that puppy well I had to use a knife and coax each one out of the pan. Much to my sadness, I lost 3 in the conflict, but 9 came out mostly unscathed. One of the tarnished brownies had to be eaten and I graciously took it out of its misery. When the brownie cupcakes had cooled I made the frosting and knew this would be the perfect pairing for my cookie butter craze. Again, be very, very careful when tasting that frosting. Just one taste is hardly enough.
Cookie Butter Brownies
Ingredients
- 2 1/2 C . Brownie Bliss Mix (you can get that recipe here)
- 1/2 C . melted butter
- 1/4 C . Cookie Butter (Biscoff or Trader Joe's)
- 3 eggs
- 1 tsp . vanilla extract
- Cookie Butter Frosting
- 1/4 C . softened butter
- 1/4 C . Cookie Butter
- Pinch of Salt
- 1 tsp . vanilla extract
- 1 1/2 - 2 C . Powdered Sugar
- 1-3 T . Heavy Whipping Cream
- Mix frosting until uniform and use whipping cream to get to desired thickness for spreading or piping. Be cautious when tasting the frosting as you may end up not having enough to put on your brownies as it is so addictively delicious.
Instructions
- Melt butter in a microwave safe bowl. Add cookie butter and mix until uniform. Add the remaining ingredients and stir until brownie batter is uniform. The mixture is quite thick. Grease desired pan (8X8, 9X9, or cupcakes). Add batter to the pan and bake at 350 for 15-20 minutes for cupcakes, 25-30 for the square pan. Do not overbake.
